The GFX100II is geared more towards slower-paced shooting scenarios like studio shooting or on-location portraiture. While it boasts a smaller body for housing a 102MP Medium format sensor, it is still heavier than your average mirrorless camera will be, so using it for travel or photojournalism would depend on your tolerance for carrying the weight. GFX lenses are also notably heavier than their counterparts for Full-Frame and APS-C cameras.
While we haven't been able to get the camera in our hands to test yet, Fujifilm indicates improvements to its autofocus performance, IBIS, and a faster 8fps continuous shooting speed which could lend well to situations that could call for quicker shooting like photojournalism. So while that may not be its primary intended use case, it certainly would be capable in that environment.
